Large Blood Sausage - Morcón


The Large Blood Sausage - Morcón - is a type of sausage similar to chorizo, with the difference that while the sausage is stuffed with small intestine, the large blood sausage -  morcón - do with the large intestine. Large Blood Sausage - Morcon -  is quite thicker than the sausage , so that the ripening period is greater .

To marinate salt , paprika and garlic are used. The lean is of higher quality morcón chorizo , thus avoiding having much fat as this .
